Turkey Meatballs with Garlic Tzatziki Sauce

Cinnamon spiced turkey meatballs with a garlic tzatziki sauce. A perfect meal prep option with a side salad or roast vegetables or even in a pita bread for a healthy Greek gyros!



INGREDIENTS:

Meatballs -

500 gm Turkey Mince

1 Brown Onion, diced

2 Garlic Cloves, crushed

½ Red Chili, finely diced

1 tbsp Fresh Parsley, finely diced

1 tbsp Fresh Mint, finely diced

¼ tsp Cinnamon

¼ tsp Salt

¼ tsp Pepper


Tzatziki -

2 tbsp Plain Greek or Coconut Yogurt or Hummus

2 heaped tbsp Cucumber, diced

1 tbsp Fresh Lemon juice

¼ tsp Crushed Garlic


MEHTOD:

1. Combine all meatball ingredients in a large bowl and mix together with a spatula or clean hands.

2. Roll into small meatballs (approx. 1 heaped tbsp.) and cook in a non stick fry pan on medium heat until cooked all the way through, turning every 2-3 minutes. Alternatively these can be cooked baked in an oven or air fryer at 180°c. Cooking time will vary depending on the size of the meatball and I recommend turning them at least once.

3. While meatballs are cooking, mix all tzatziki ingredients in a small bowl. If you are serving with a salad, make it at this step. I used spinach, cucumber, tomato, grated raw beetroot, avocado and purple onion. Don't forget to check on the meatballs and cut one in half to check they are completely cooked!

4. Serve straight away with your salad. Alternatively, store in the fridge for a pre-made lunch or snack option.
